We made two clootie dumplings for our recent James Watt Supper – one in the microwave, and one by more traditional means. Here’s the recipes for both. Enjoy.
TRADITIONAL CLOOTIE DUMPLING
You’ll need:
- 1 pound of S.R. Flour
- 1 teacup of breadcrumbs
- 1 teacup of sugar
- 1 teacup of suet
- ½ pound of sultanas
- ¾ pound of raisins
- 1 grated apple
- 1 teaspoon of mixed spice
- ½ teaspoon of salt
- 1 tablespoon of Treacle.
- ½ pint of cold milk.
- 1 muslin cloth
- Very large bowl
- Ball of string
- Very large pot
- Plate
Method:
Mix all ingredients 1-9 together in the bowl, and then slowly blend in the treacle and milk.
Scald the muslin cloth, lay it out on your work surface, and then dust it with the flour, putting the dumpling mix into the middle of the cloth. Bring up the corners of the cloth and tie it with the string, [Remember to leave space for the pudding to rise]
Place the covered dumpling mix into the boiling water to rest on the plate at the bottom of the pot.
Boil steady for 3-4 hours topping up the boiling water every 45 minutes. Making sure that ¾ of the covered dumpling is immersed in boiling water.
Remove the covered dumpling and put it in a colander in the sink, untie the string and gently pull the corners a part. Place a plate over the dumpling and whip it over, then carefully peel the ‘cloot’ away.
You can dry it to make a skin on the Dumpling by placing the dumpling and plate in a warm oven which is switched off and leave it to rest.
You’ll need:
- ½ pint of water
- 4oz sugar
- 1 tablespoon of cinnamon
- 1 tablespoon mixed spice
- 6 oz butter
- 8 oz of sultanas
- 8 oz raisins
- 1 tablespoon of Treacle.
- 8 oz of plain flour
- 1 teaspoonful of Baking powder
- 2 beaten eggs
- Large baking bowl
- Cooking pot
- Cling Film
- Pudding bowl
- Microwave
Method:
Put in the 1-8 ingredients in a pot and bring to the boil and simmer for 5 minutes.
Place the flour and baking powder in a large bowl and mix in the eggs. Add the hot mixture and mix well.
Pour into a cling film lined pudding bowl and cook in the Microwave for:
- 1000 watts – 7 minutes
- 650 watts – 9 minutes
- 500 watts – 12 minutes
Cool for a little, and then turn it out onto a plate.
